How To Make Quinoa Salad At Home

Ingredients
- 11/2 cups quinoa
- 1 English cucumber, peeled and finely diced (21/2 cups)
- 3 Roma tomatoes, seeded and finely diced (3/4 cup)
- 1/2 small red onion, finely chopped (1/2 cup)
- 1/2 cup chopped fresh parsley
- 1/4 cup olive oil
- 3 Tbs. lemon juice
- 2 tsp. grated lemon zest
